Having an animal in a company logo serves a couple of purposes...
1.- To fast identify the company.
2.- To give it a meaning, as animals always portray some kind of attributes the company identifies with...
As a graphic designer I've made some animal illustrations, but i stay more comfortable with vector, geometric designs. Most of them are minimalistic approaches.
Logos with minimal details are best remembered. I recall a video where a father show some logos to his son. He remembered best the ones with less amount of details.

Lion
An hexagon turned into a lion head.
Dragonfly
A front view of a dragonfly. The focus is on the big heads they have.
Pigeon
Just a head and a wing and you can't tell it's a pigeon.
Sad Dog
The detail was focused on the tear that sheds from the dog's eye.

The eyebrow of the owl makes them very distinguishable.

Rhinos are known for their ferocity, perfect for a law firm. This logo also resembles a briefcase...
